Today was a Wonderful HOT day
we hit into the 90's
CRAZY!
Summer is coming!
We should probably only have one more snow storm before then ;)
(no, I'm not joking, this is Utah!)
I knew I wasn't going to want to cook because we haven't turned on the A/C yet, so a warm kitchen was out of the question. I decided to do a bit of a tropical theme and since my dear sister Debbie is in the Philippines this week, we looked to foods she might be eating.
This is what we came up with:
Mango/Orange/Pineapple Juice, lots of rice, mango popsicles, spring rolls, fresh mango and pineapple and edamame!
Just looking at all those mango items reminds me of a funny thing that happened last summer. I did a favorite things swap and was partnered with a darling girl in TX who is from the Philippines. We sent each other a goodie box of some of our favorite items ... curiously enough, we both sent each other dried mangoes, funny, eh? ... I obviously have a thing for mangoes.
Anyhow, it was an easy, light dinner, perfect for a hot day!

It's been in the 90's here in FL several times already, we do have a break from this week though since it's been raining nonstop.
